[Food Review] Fiaschetteria - Pistoia - Super Authentic Italian Pasta Place from Pistoia, Tuscany in Amsterdam

Just like other European cities, Amsterdam also boasts numerous Italian restaurants, but one place truly stands out: Fiaschetteria - Pistoia. Securing a table at this establishment is no easy feat; it's like going into battle, and timing is crucial to avoid losing your reservation.

On a fine evening in May, I had the privilege of attending a farewell dinner for a colleague. Fortunately, I managed to secure a table for five and hurried to the restaurant, determined not to lose my reservation.

The charm of Fiaschetteria - Pistoia extends far beyond its ambiance. One thing that immediately caught our attention was the unique wooden wine box filled with an array of wines available by the glass or bottle. We opted for a bottle of Chianti to complement our dining experience.

Originally established in 1890 in Pistoia, Tuscany, a region northwest of Florence, the restaurant proudly carries the name of its birthplace. Fiaschetteria Pistoia has expanded to two locations in Amsterdam and two in New York. Their menu beautifully showcases Tuscan and Pistoiese culinary traditions.

Our feast commenced with Pistoiese specialties. We indulged in Arista alla Pistoiese, Crostini Toscani, and Sformatino di Zucchine. Arista alla Pistoiese, a dish I had never tried before, combined tender pork with extra virgin olive oil, offering a perfect balance of flavors. The savory chicken liver on crostini, known as Crostini Toscani, received high praise from all, including our Italian companions.

Fiaschetteria - Pistoia is also renowned for its pasta, which is freshly made right before your eyes. We ordered five different pasta dishes, one for each person, but ended up sampling and sharing them all. The flavors were simply exquisite, and we couldn't resist the temptation to try each unique creation.




While all the pasta dishes were superb, my personal favorites were the Spaghetti con Bottarga and Pici Freschi Cacio e Pepe. They were delightfully fresh, perfectly cooked, and bursting with flavor.

Watching the truffle and bottarga being shaved in front of us added an extra sensory dimension to the experience. As depicted in the pictures, the portion sizes were generous, in true Italian fashion.


After the pasta extravaganza, we decided to indulge in desserts, ordering four out of the five options available. To our delight, the staff also treated us to Cantucci e Vin Santo as a complimentary addition. The freshly baked Cantucci paired perfectly with the Vin Santo, evoking memories of my time spent in Florence during the summer.

Fiaschetteria - Pistoia Amsterdam: Pasta Frolla e Zabaione

Among the desserts, our favorite was Pasta Frolla e Zabaione. Zabaione is always a crowd-pleaser, but the sweet and rich zabaione cream accompanied by the delicate shortbread after the hearty pasta dishes provided an incredibly satisfying and comforting combination.

As our dinner came to a close, our stomachs were on the verge of bursting, but the bill came to a reasonable 50 Euros per person, a rarity in Amsterdam. Considering the exceptional quality of the food at this Italian restaurant, it was truly a remarkable value. I would undoubtedly return to Fiaschetteria - Pistoia if I were fortunate enough to secure another booking at this remarkable establishment.

  Almost simultaneously, several people recommended a place to me: Fuku Ramen. They mentioned that despite not being run by a Japanese person, the quality of the ramen exceeded expectations, surpassing that of any other ramen joint in Amsterdam. I have been to Bussia Panificio a few times, but I haven't explored the Joordan area in a long time, so I almost forgot about it. However, last Sunday, the weather was amazing, and as we were walking down the street towards the Pulitzer, the unmistakable orange interior of Bussia caught our attention, right before the Pulitzer Hotel. For more details, please find my YouTube below.   The striking orange interior still shone beautifully in the morning sunlight. We initially considered sitting outside, but since the sun hadn't yet warmed the ground and it was still chilly, we opted to stay indoors after checking the temperature. Additionally, I've noticed that whenever I sit outdoors in the Joordan area, the sidewalk feels too narrow as well. Bussia's distinctive interior remained unchanged. Managed by the Burro group, the establishment is divided into two sections: the Panificio area, meaning bakery in Italian, and the traditional restaurant area.
